Meal planning and prepping is the best way, to be on a healthy eating track without stressing about how much and what to eat.
Meal plans do not have to be complicated or fancy. I like to focus on basic meals that include having leftovers for lunch. I usually prepare basic ingredients in bulk: making portions of boiled chickpeas, quinoa, barley, and legumes – ingredients that can easily be tossed with chopped greens during the week.
Other on the go lunch ideas: Create salads and store them in mason jars in advance for the week. Make hummus and so in an air-tight container to have it later with veggies as a snack. Cook rolled & steel oats to enjoy in breakfast during the week. Grill chicken can be used for a sandwich or toss it in stir fry vegetables.
This helps to save time & money as you can plan your grocery list accordingly. You need to have healthy food stock in your pantry. It is important to shop the perimeter of the grocery store where there is a stock of nutritious food and always check food labels to avoid high fructose and sodium content.
